Balsamic Roast Pork with Roasted Potatoes and Vegetables

1 boneless pork loin roast, about 2 pounds
2 yams, peeled and cut in chunks
4 potatoes, peeled and cut in chunks
1 cup baby carrots
3 tbl each olive oil and balsamic vinegar
Salt and pepper

Mix oil, vinegar, salt and pepper.
Place pork roast in roasting pan. Pour a little of the oil mixture over the top. Toss the rest over the vegetables in a mixing bowl.
Spread the coated vegetables around the pork in the pan.
Bake, covered, at 325 for 1 hour and 15 minutes.
