My mom always tells me that she cooks pot roast in beer, but I hadn't tried that myself. And she wasn't home when I was getting ready to start dinner today--so I "winged it." I like how this turned out, and with the onions and braising liquid, you don't need to make gravy.
DUTCH-OVEN POT ROAST with Sweet Onions, Garlic and Yeungling
1 2 1/2- to 3-lb bottom round roast
1 tbl olive oil
3 medium sweet onions, sliced
3 cloves garlic, peeled
pepper
1 bottle (12 oz) Yeungling lager
Use a cast-iron Dutch oven for this dish.
Heat olive oil in Dutch oven and brown roast on all sides. Remove to plate. Add onions and cook a few minutes on high heat. Season roast with pepper and return to Dutch oven. Add garlic and beer. Cover and bake at 350 for 2 hours. Allow to rest 10 minutes before slicing and serving.

Original Recipe: Pasta with Beef and Fennel Sauce
Much as I may claim that "laziness is the mother of invention," there are times when I agree that necessity deserves that title. It's certainly true in cooking. This recipe was born out of a moment of panic when I realized that somehow I had run out of spaghetti sauce with meatballs without realizing it--and I'd planned that very thing for dinner (and had no time to start up a big batch).
I did have some sauce without meatballs, though, and some ground beef. So I thought I'd make a baked ziti with meat and cheese...but that's not really what I wanted for dinner. That's when I got busy inventing. The result was a big hit; it has the flavor of Italian sausage without all the grease.
The whole thing cooks in the time it takes to boil a big pot of water and cook pasta, so it's a quick and easy meal.
PASTA WITH BEEF AND FENNEL SAUCE
Serves 6
3 to 4 cups spaghetti sauce without meat
1/2 lb. ground beef
1/2 medium onion, chopped fine
1 TBL olive oil
1 TBL fennel seed
1/4 tsp. crushed red pepper
Brown ground beef and onion in the olive oil. Drain, add fennel and pepper, and cook 2 minutes more until spices are fragrant. Stir into spaghetti sauce. Heat until warmed through and serve over your choice of pasta.

Beef Paysanne
This is a dinner I've been making for years. It's a great way to re-invent leftover pot roast; I always make enough pot roast for two meals and freeze half of it so we can have this dish sometime down the road. Freezing hint: add some beef broth or some of the pan juices to the freezer container along with the meat to help keep it moist.

Burrito Bowls: a Secret Recipe Club Reveal
I'm a big fan of the Burrito Bowls at Chipotle Mexican Grill, and in the past I've enjoyed making these at home. But these bowls rely on fresh ingredients, and you can really only get good tomatoes in the summer and early fall. The rest of the year, the pico de gallo falls short and I shy away from making this family favorite.
Thanks to the Secret Recipe Club, I've found a way to have my Burrito Bowls any time of year. How did that happen? My assignment for April was The Cookaholic Wife's blog. What a great name--I instantly relate, since I'm a cookaholic myself. There were plenty of tempting recipes from which to choose (I still want to try the Asian Chicken Noodle Soup) but I settled on the Red Bean, Rice and Meat Burritos. They looked like a great alternative to the Burrito Bowl recipe I'd worked out last summer. Here's how I made them:
Burrito Bowls
Printable Recipe
2 cups rice, cooked
1/2 lb. ground beef, browned and drained
1 TBL homemade taco seasoning
3 TBL water
1 small onion, diced
1 red pepper, diced
1 can petite diced tomatoes, UNdrained
1 can pink beans, drained and rinsed
1 1/2 cups frozen corn
1/4 tsp chili powder
1/4 tsp cumin
1/4 tsp garlic powder
1/8 tsp chipotle chili powder
olive oil for the pan
tortillas
Cheddar-Jack blend cheese
1 lime
sour cream
After you start the rice, season the browned ground beef with the taco seasoning and water and keep warm. Warm a little olive oil in a skillet and add onions and peppers. Cook 5 minutes, then add tomatoes, corn, beans, chili, cumin, garlic and chipotle chili. Continue cooking until most of the liquid has cooked off and everything is hot.
Serve in bowls or warmed tortillas. Top with a squeeze of lime juice and a dollop of sour cream (optional).
Things I changed: In the original recipe, the rice, vegetables, and meat were all mingled before adding them to burritos. I doubled the rice (we like rice) and cut the meat in half. I kept the three separate (putting all the vegetables together) to make it easier for family members to customize their own burrito or bowl. Because I didn't mix the vegetables with the meat, I seasoned them as well. I only had a red pepper, but red and green would be great. I used pink beans instead of red, because that's what I had in the pantry. I'd like to make this again using red beans, and again using black beans--I think it would be amazing with black beans. And I added a fresh lime on the side so we could flavor the rice with a little lime juice.
Survey SAYS! This was delicious! It was easy to customize the meal to personal tastes and to accommodate the vegetarian in our midst. I ate a big bowlful and was ready for more. It's a healthy, great-tasting, easy high-protein meal. Everyone enjoyed it and will be happy to eat it again! Next time, I'm going to top it off with some fresh cilantro. Best of all, this was much easier to make (and clean up) than the Chipotle-clone recipe I'd been using. Since I love the cooking part but not the cleaning part, that was a most welcome development.
This one's a keeper! And I'll be back to visit Nichole's blog again very soon.

Secret Recipe Club: Taco Pizza
It's the March Madness Edition of the Secret Recipe Club! In this group, each member is secretly assigned the recipe blog of another member. The recipe is then prepared and taste-tested, photographed for cyber-posterity and posted. It's fun to try new recipes, and I'm lucky to have a family that's generally good-natured about such experiments.
Of course, if I left the choosing to the kids, they'd pick cookies every time. While cookies are fun, I like finding new main-dish recipes too. So even though my assigned blog for March is really heavy on cookies, I focused on the non-dessert offerings at Sweetie Pettiti. But that doesn't mean I didn't find a "fun" recipe!
Susie worked hard to duplicate her childhood favorite, Happy Joe's Taco Pizza. She had to find a recipe that lived up to her high nostalgic expectations. I had no such expectations, since I never ate at Happy Joe's. The idea of Taco Pizza was appealing, though--and I figured my family would love it. And salad on a pizza sounded fun, different, and even (imagine that) good for you!
Changes I made:
Instead of one huge pizza, I made individual ones. This allowed each family member to customize their Taco Pizza. If your kids like to help in the kitchen, this is an ideal recipe. Once the ingredients are all assembled, kids can spread their favorite toppings on their pizza, then the grownups can bake it until done.
I also added sauteed onions as a topping. (YUM!)
I had no tomatoes in the house, so I skipped those. This is not the time of year for tomatoes. In the summer, though, I'd have to add them!
I made my own pizza dough based on the recipe at Once a Month Mom rather than using premade dough.
Finally, I made a meatless pizza for my daughter, at her request.

This is a yummy dish! It would be a fun meal to have while you're watching a little March Madness--just be sure to have plenty of napkins handy, because (as Susie pointed out in the original recipe) the toppings fall all over the place. It was easy to customize to individual tastes. My daughter had a meatless pizza. My husband ate his salad separately and spread sour cream on top. It's also frugal: I used up some pizza sauce and refried beans that were already in the refrigerator, so it's a good way to reinvent some leftovers. I found that it was easier to "fold" this pizza like a huge taco and eat it that way rather than slicing and lifting little pieces of it.
Here's how to make this at home:
Taco Pizza
Makes 8 individual pizzas
1 batch pizza dough, divided in 8 portions, rolled and par-baked for 5 minutes at 425
1 lb. ground beef, browned and drained
1/2 onion, finely chopped and cooked until onions are soft
2 TBL taco seasoning
1/4 cup water
1 can refried beans
1/4 cup taco sauce
1/4 cup pizza sauce
1/2 cup mozzarella cheese, shredded
1 1/2 cups cheddar-jack cheese, shredded
Lettuce, shredded
Tortilla chips, broken into small pieces
Additional taco sauce, optional
Sour cream, optional
Season cooked ground beef with taco seasoning. Add water and simmer until water cooks off. Meanwhile, mix refried beans, taco sauce and pizza sauce. (I found that heating the beans in the microwave for about a minute made them easier to mix up with the other ingredients). Spread bean mixture on your par-baked pizza crusts.
Top with mozzarella cheese, then with seasoned taco meat.
Add onions, then cheddar-jack. Bake at 450 for 8 to 10 minutes, until cheese is melted and crust is golden brown on the edges.
Allow pizza to sit a few minutes before you try to slice or eat it. Then top with salad and chips.
Grab a napkin or three, and dig in!

French Dip Sandwiches (Slow Cooker)
This is a perfect busy-day recipe. You put it together in just a few minutes, then let it cook all day.
1 bottom-round roast, about 3 pounds
2 cups beef broth or consomme
Seasoning: freshly-ground black pepper, garlic powder, onion powder, kosher salt
Season the meat on all sides. Place in slow cooker and pour broth over it. Cook on HIGH for 1 hour, then turn down to LOW for about 7 to 8 hours.
Trim fat off the meat and cut into a few chunks, then shred with 2 forks OR if you have a stand mixer, try this really easy way: Put chunks of meat into the mixer. Using the paddle attachment, spin it a few times on LOW. Rearrange the contents of the bowl and spin a few more times. Watch carefully as there's a fine line between shredded and pureed.
(Hat tip to Gluten Free Homemaker for the stand-mixer idea! It really works!)
Serve on Italian rolls with the juice from the crockpot for dipping.

Speedy Skillet Dinner
Everyone in my family likes the Skillet Stroganoff recipe that Barbara shared. I leave out the sour cream, which makes it more of a "hamburger helper" type dinner, but that's how we like it.
I've worked out ways to do a good amount of the cooking of this dinner ahead of time, which is great for days like today. My choir is singing at the 5:00 Mass tonight, which means that we get home well after 6 and everyone is hungry for dinner right now. They don't want to wait. This can be on the table in 15 minutes if you do everything possible ahead and have your stuff ready to remove from the fridge and pop on the stove the second you get home!
SPEEDY SKILLET DINNER printable version
1 lb. lean ground beef
salt and pepper
1 TBL vegetable oil
1 cup white mushrooms, sliced thin
1 onion, finely chopped (or half a large onion)
3 cups* beef broth
3 TBL* red wine
3 cups* wide egg noodles
2 TBL all-purpose flour
2 TBL butter
MAKE-AHEAD:
In a hot skillet, brown ground beef, seasoning with salt and pepper to taste. Remove from skillet.
Add oil and cook mushrooms and onion until liquid from mushrooms has evaporated, about 8 minutes. Add broth and the wine, and return beef and accumulated juices to pan. Bring to a simmer.
Remove from the stove and put in a large covered container in the fridge until you're ready to resume cooking.
JUST BEFORE DINNER:
Melt butter in skillet and stir in flour. Return beef mixture to skillet and bring to a boil. Stir noodles into beef mixture, cover, and cook, stirring occasionally, until noodles are tender, 10 to 12 minutes. Serve with a salad or "steam in a bag" vegetables.
NOTE: You can stretch this recipe by adding extra noodles, broth and wine. Just make sure that you add 1 cup broth and 1 TBL wine for every extra 1 cup noodles.

Shepherd's Pie
This was our St. Patrick's Day meal. I got the recipe from Barbara at Bless Us, O Lord. I changed a couple of things, so the recipe below is the way I made it.
Bake for about 20 minutes or until the potato is nice and browned on top.
NOTE: My family wasn't crazy about the peas, so next time it might just be carrots in the Shepherd's Pie. There WILL be a next time! Also, I thought the Worcestershire sauce tasted really strong, so I will reduce that amount in the future.
Shepherd's Pie
butter
salt and black pepper
1 lb. lean ground beef
1 large onion, finely diced
2 c. frozen peas & carrots
3/4 t. dried thyme
butter
salt and black pepper

3 T. ketchup
2 T. Worcestershire sauce
1 cup chicken stock (beef could also be used)
5 to 6 potatoes, boiled and mashed with milk and butter
1/2 cup finely shredded Cheddar cheese
Preheat oven to 400F.
Heat a skillet over medium high heat. Melt about 1 T. butter in pan. Add onions and saute for a minute or two, then add the meat. Season with black pepper and thyme. Cook until browned, then drain any fat. Add the butter and peas & carrots. Sprinkle with flour and stir through. Add ketchup, wine and Worcestershire sauce. Let this reduce slightly, then add the chicken stock. Allow to reduce down until you have a thick meaty gravy. Season to taste.
Remove from heat. Pour into 9X13 casserole. (I learned the hard way that this is just too much food for a 2-quart baker!) Mix cheese into the mashed potatoes, then spoon or pipe the mashed potatoes over top.

Sunday breakfast and dinner recipes
I bought a chuck roast the other day intending to cube it up for stew. But I decided to look around for other ways to use the chuck roast. This recipe for Slow Cooker Beef with Root Vegetables looks good! This might be our Sunday dinner along with some Portuguese Easter bread. Or maybe this version of pot roast!
Deborah just posted these Cinnamon French Toast Cups over at her Tast.ie food blog! I HAVE to try these. I've been meaning to do the French Toast Cups anyway, and this cinnamon version...how can you miss?
MARK'S POT ROAST
3 lb. chuck roast
Olive oil as needed
Salt and pepper to taste
1 pint beef stock
1 cup red wine
1 tablespoon tomato paste (optional)
2 bay leaves
Chopped thyme, rosemary and parsley to taste
4-5 red potatoes
4 large carrots
20 pearl onions or 2 medium Spanish onions
4 cloves garlic, chopped
Take the widest covered pot you have and place it on the stove on high heat. Brush the roast with olive oil and sprinkle both sides with salt and pepper. Add oil to the pot, wait till it starts to smoke and sear the roast on each side until browned. Remove the roast, add the wine and deglaze the pot, scraping the browned bits off the bottom, as the wine comes to a boil. Add the stock and tomato paste, return it to a boil, and then reduce it to a simmer. Add salt, pepper, bay leaves, thyme and rosemary. Add the meat back into the pot and cover. Place the pot in a 350 degree oven or maintain it at a very gentle simmer on the stovetop for two hours. Meanwhile, peel and cut the potatoes into quarters and place them in a bowl of water to prevent them from browning. Cut the carrots into large chunks. Peel the pearl onions and leave them whole or peel and quarter the Spanish onions. At the 90 minute point add all of the vegetables and garlic. Cook for another half hour or until the vegetables are tender. If it takes a little longer than two total hours that's fine. A little extra cooking time will not harm the meat. Add the chopped parsley just before service.

Cinnamon French Toast Cups
(makes 8)
- 3 eggs
- 2 fl. oz / 1/4 cup milk
- 1 tbsp vanilla extract
- 3 tbsp sugar
- 3 tbsp melted butter
- 1 tsp cinnamon
- 5 slices bread, cubed
Pre-heat oven to 200C/400F
Whisk the eggs with all the ingredients except bread. Once well combined add the bread and toss to coat. All the liquid should be soaked up.
Spray a muffin tin with cooking spray or butter 8 holes. Spoon the bread mixture into each muffin hole.
Bake for ten minutes until cooked through and slightly crispy on top. Glaze and serve.
For the glaze:
- 1/2 cup powdered/icing sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tbsp milk
Whisk all ingredients together until smooth. Pour over toast cups.

Steak Sandwich Kabobs
Inspired by a recipe in Taste of Home Simple and Delicious.
1 recipe focaccia bread, cooled and cut in cubes (just make the bread--don't add the pizza toppings)
1 lb London broil steak, cubed
2 bell peppers, cut in 1-inch chunks
1 large sweet onion, cut in 1-inch chunks
Provolone Cheese Sauce (see below)
Thread steak, peppers, onion and focaccia onto skewers.
Grill 8 to 10 minutes until done, turning occasionally.
Serve with cheese sauce.
Provolone Cheese Sauce
1/8 cup butter (2 tbl)
1/8 cup flour
pinch of salt
1 cup milk, divided
5 slices provolone cheese, broken up
Melt butter. Stir in flour. Add salt and half the milk; when it starts to thicken add the rest of the milk. Add cheese a little at a time, stirring until well mixed.

Beef Burgundy Stroganoff
For lack of a better name...I invented this dish as a combo of some other recipes I have cooked before. It's a delicious way to "recycle" your leftovers.
2 cups thick-sliced cooked roast beef/pot roast, cubed
1 can cream of mushroom soup, condensed
1/2 cup burgundy wine
1 packet onion soup mix
1/2 tsp dried thyme
2 cups sliced white mushrooms
Mix soup, wine, thyme and soup mix until well blended. Add cubed meat and sliced mushrooms. Stir until coated. Cover and cook 20 to 30 minutes, stirring occasionally. Serve over noodles.

1/2 cup burgundy wine
1 packet onion soup mix
1/2 tsp dried thyme
2 cups sliced white mushrooms

Goulash
I make this in my roaster oven. You could also use a crock-pot on HIGH. As the meat's already cooked, basically you just need to let the flavors blend.
2 cups cubed cooked roast beef
2 medium onions, chopped
2 small bell peppers, cut into thin strips
1/2 cup beef broth
2 tsp paprika
1/2 tsp caraway seed
1/2 tsp marjoram
1 can (14 oz) diced tomatoes
salt and pepper to taste
Cook in 4 or 6-qt roaster oven at 200 to 225 for one hour.
Serve over noodles or spaetzle.
